A couple of years ago we began a simple quest; create the perfect chocolate chip cookie. We tried many recipes. We read many blog posts. We watched videos. We learned. We practiced. We gained weight.
Then the Covid lockdown happened.
We continued the quest. We chased elusive ingredients. We perfected techniques and baking times. Until we finally had what we considered to be the best chocolate chip cookies that we tasted..
Then everyone started to come back into the sunlight and back into the office. Part of my job was to teach software developers about new technologies, and to encourage them to come to my training sessions I provided them with items that are essential for developing software; pizza, beer and chocolate chip cookies. From there, the recipes were tweaked based on real-life feedback.
About this time, we discovered a small distillery not too far away called 1845 Distilling Company. Their bourbon was fantastic! So many flavor notes.
An idea hit. What if we could combine the flavors of the bourbon with the chocolate chip cookies? To do that, we wanted to really drive the bourbon flavors home. Many recipes have a teaspoon or two of bourbon to a batch. We wanted more than that. In the end, the cookies ended up with just slightly less than an ounce of bourbon per cookie. For reference, a shot of bourbon is two ounces.
We tried the cookies with other bourbons. Each cookie flavor has its own unique flavor profile, just like bourbon does. We also expanded our reach with cookies made with beer and we are actively working on recipes for other spirits.
