Dark Rum Raisin Oatmeal Cookie

A cookie loaded with rum-soaked raisins, our take on oatmeal raisin cookies take things to the next level.  We start with three kinds of raisins, soaked in rum so they are nice and plump, and follow that up with almost a half an ounce of dark rum, along with Madagascar vanilla and cinnamon.

Each cookie weighs almost 4 ounces before we cook it and the end result is a cookie that is just slightly browned on the outside and still moist and chewy on the inside.
